Chocolate Chip Toffee Oatmeal Cookies aka Lactation Cookies

On Sunday I shared our breastfeeding story - the ups and the downs, the good and the bad. I have to say, I really appreciate all of the kindness and support. It's reassuring to know that other people have had similar experiences and triumphed in one way or another. I am positive that the improvements to my milk supply were due to suggestions from the lactation specialist. And when your doctor suggests a magical cookie that will boost your milk supply, you say 'yes please.'


These aren't just any cookies. These are Lactation Cookies. These are a nursing mama's baked bestfriend. Try them. You'll be a believer too. Even if you aren't nursing (and I imagine that is most of you), try these anyway - they'll hit the spot.

Tropical Delight Macadamia Nut Cookies

I haven't shared a recipe in what feels like forever. This cookie recipe is sure to please and is one of the easiest to throw together. These Tropical Delight Macadamia Nut Cookies combines one of my fave things - toasted coconut, and one of the Mr.'s - macadamia nut cookies.


And guess what -- all you need are a few ingredients from the bulk food aisle and a Betty Crocker White Chip Macadamia Nut Cookie Mix.

Snowman Button Cookies

I mentioned on Monday that over the weekend the Mr. and I babysat together. It was a blast since we were with three of our favorite children (our ring bearer, flower girl, and their baby brother). I thought it might be fun to bake a little treat with them since we used to cook together all of the time when I was their nanny. Best decision ever. Today's recipe is the fifteenth of The 25 Projects of Christmas - Snowman Button Cookies.


Maybe I just had the best helpers ever, but these cookies were perfect for little hands to make. You can make this with any prepackaged cookie mix or your favorite cookie dough. And they are just so darn cute, why wouldn't you want to make them?

Chocolate Chunk Peanut Butter Cup Cookies

Do you know what is momentous about today's post? It's NUMBER 100! I probably should have planned ahead and did something centered around that premise, but instead I share a ridiculously delicious cookie recipe. Sue me! ;)

I'm sure you've heard the old adage: why fix what's not broken? That's the way I feel about the classic double chocolate chunk recipe from Nestle Toll House. Well, that was until I decided to donate some cookies to a bake sale fundraiser and felt the need to go above and beyond the norm. I grabbed a container of Skippy and a bag of mini peanut butter cups and got to work.



How yummy does that bite look? Chunks of bittersweet chocolate and entire morsels of peanut buttery goodness... what's not to like? Evidently they were fan favorites at the bake and I can't imagine why, tee-hee!

S'mores Cookies


Who doesn't love s'mores? I don't even like chocolate but I can inhale two s'mores without a second thought. They are the perfect summer time treat and a sweet nightcap to a long day. I'm always trying to come up with new ways to reinvent the wheel and these cookies are almost better than the original. They are super tasty and what's S'MORE (tee-hee) is that they are quick and easy. If we are going to jazz up the recipe anyhow, why not cheat a little and use cookie dough mix? I won't tell if you won't tell. 

S'MORES COOKIES

Ingredients:

  • Betty Crocker Double Chocolate Chunk Cookie Mix (+ 1/4 cup of oil, 2 tablespoons of water, and 1 egg)
  • 1 cup of graham cracker crumbs (about 10 crackers finely chopped)
  • 10 large marshmallows



Directions:

  1. Preheat oven to 375 and gather all ingredients in one area
  2. Form chocolate dough into semi-round blobs (the dough will stick so I used only one hand to touch the raw dough)
  3. Toss the dough ball into the graham cracker crumbs and coat thoroughly
  4. Place dough onto lightly greased cookie sheet
  5. Bake for 8-10 minutes (it's okay if they are slightly undercooked as they will be back in the oven soon anyhow)
  6. Chill on rack for 5-10 minutes, the return to cookie sheet
  7. Cut large marshmallows in half diagonally with kitchen shears
  8. Top each cookie with one half of a marshmallow -- sticky (cut) side down.  rounded side up. 
  9. Place the cookies under the broiler for 2 minutes, or until toasted (don't take your eyes off of marshmallows as you don't want them to char)

Don't these look fantastic? The best part is that they taste BETTER than they look. There's no reason why you shouldn't try this recipe considering you can get everything you need for less than 5 bucks. 



They are best right out of the oven when everything is still warm but feel free to store in an air-tight container for up to one week.

PB&J Heart Cookies

Despite how much I love to bake, the Mr. and I are not really dessert people. When holidays come around, I covet the time I get to spend creating sweet deliciousness for other people. Valentine's Day is no exception. I didn't have much time last Monday as it was a rough day in the office and a tax-filing headache at home, but I still wanted to make something for my coworkers and neighbors. Since I didn't start until about 9pm, making a homemade dough was out of the question but I did have some peanut butter cookie mix laying around and then it hit me... I saw a cute little heart thumbprint cookie in either Better Homes and Gardens, Real Simple, or Martha Stewart Living a couple of years ago and thought I'd finally revisit the idea by making PB&J cookies!

I used the Betty Crocker Peanut Butter Cookie Mix and prepared it according to the instructions. Rather than flatten it out with a fork like you generally would, I created a thumbprint cookie where I overlapped my thumb impressions to create a little heart ditch. I filled the ditch with some Triple Berry Fruit Spread (just a little). I then baked the cookies according to package directions.

Voila! Precious heart cookies!
