Chocolate Chip Toffee Oatmeal Cookies aka Lactation Cookies

On Sunday I shared our breastfeeding story - the ups and the downs, the good and the bad. I have to say, I really appreciate all of the kindness and support. It's reassuring to know that other people have had similar experiences and triumphed in one way or another. I am positive that the improvements to my milk supply were due to suggestions from the lactation specialist. And when your doctor suggests a magical cookie that will boost your milk supply, you say 'yes please.'


These aren't just any cookies. These are Lactation Cookies. These are a nursing mama's baked bestfriend. Try them. You'll be a believer too. Even if you aren't nursing (and I imagine that is most of you), try these anyway - they'll hit the spot.


With several ingredients that pack a mean punch of milk supply boosters and a chocolate-y toffee goodness that rivals your favorite candy bar, you'll grab for these cookies at all hours of the day and night. If you're breastfeeding or want to gift something 'outside of the box' to a new mom, this recipe is just what the doctor ordered - literally.



INGREDIENTS
1 C sugar
½ C brown sugar
1 C butter
4 T water
2 T flaxseed meal (no substitutions)
2 large eggs
4-6 T brewers yeast (be generous – no substitutions)
3 C old fashioned oats
2 C all-purpose flour
1 t vanilla extract
1 t salt
1 t baking soda
1 C chocolate chips
1 C toffee bits

DIRECTIONS
1.       Preheat oven to 375
2.       In a cup, combine flaxseed meal with the water, set aside for 3-5 minutes
3.       Cream together butter and sugar
4.       Once combined, add eggs
5.       Pour flaxseed and water mixture into the mixing bowl with the sugar/butter
6.       Add vanilla and blend until smooth
7.       Sift flour, salt, brewers yeast, and baking soda
8.       Add butter wet ingredients to dry ingredients
9.       Stir in the oats
10.    Fold in the chocolate chips and toffee bits
11.    On a cookie sheet lined with parchment paper, drop rounded tablespoons 2-3 inches apart
12.    Bake 8-12 minutes

Yields about 50 cookies. 

Store cookies in an airtight container in the freezer. Eat 1-3 cookies per day and if you're anything like me, or the countless others who swear by these, you'll see what they can do.
